
These are my Sourdough Discard Granola Bars (can also be known as the sourdough lactation bars!)
Great for using up sourdough discard.
They’re easy, tasty, and perfect for any mum or someone on the go who needs a quick snack.
Ingredients:
1 cup sourdough discard (about a week old or less)
1/4 tsp good-quality salt
1/3-1/2 cup honey or maple syrup (your choice)
A splash of vanilla extract
A good sprinkle of flax seeds
A pinch to a tsp of cinnamon
A scoop of collagen powder (optional)
Dry Ingredients:
2 cups organic oats
A mix of any nuts and seeds you like, chopped—pepitas, almonds, walnuts, etc. (I like to soak and roast mine beforehand for extra nutrition)
1/2 cup dried fruit (I used raisins)
Instructions:
In a bowl, whisk together all the wet ingredients—sourdough discard, salt, honey/maple syrup, vanilla, flax seeds, and any optional extras like cinnamon or protein powder.
In another bowl, mix together the dry ingredients: oats, nuts/seeds, and dried fruit (if using).
Combine the dry ingredients with the wet ingredients and give it a good mix.
Grease a 9x13-inch pan or line it with non toxic parchment paper. Spread the mixture evenly in the pan.
Bake in a preheated oven at 175°C for about 20 minutes, or until golden and firm to your liking.
Let them cool, then slice into bars.
